Lemony Asparagus Pasta: A 10 Minute Supper For Two From Tart London

Created by Tart London, this effortless lemony asparagus pasta is fresh, vibrant and ready in just 10 minutes, the kind of supper that feels both comforting and sunshine-filled. 

Don’t skip saving your pasta water! That starchy liquid is what transforms olive oil and lemon juice into a silky, emulsified sauce that coats every single strand.

Recipe

  • 200g spaghetti
  • 2 garlic cloves, sliced
  • 1 lemon
  • 1/2 tsp dried chilli
  • Bunch asparagus
  • Basil
  • 50g Parmesan

Method

Cook your pasta and reserve a cup of the pasta water.

Heat a good glug of olive oil in a pan and add the garlic chilli and lemon zest, saute for a min or so then add your asparagus, shake the pan and cook for a minute. Add the pasta back in then follow with the lemon juice, pasta water and Parmesan and toss till the pasta is nicely coated. Season and add a handful of basil. Serve in warm bowls.
